
Marketplace is a self-service concept for elegant cuisine at restaurant level, tailored especially to the needs of guests who are pressed for time such as air and rail passengers. The interior of Marketplace restaurants is open-plan.
There are no barriers such as turnstiles, which is key since most passengers travel with luggage, which they cannot leave unattended. To meet the needs of all travelers and guests who prefer full-service dining, we recommend integrating a counter in the seating area where orders can be filled quickly and which is connected to the self-service area both in terms of architecture and service.
Marketplace restaurants consist of individual food and beverage modules. Self-service counters let guests freely sample different salads, antipasti and the like according to their tastes. Guests receive warm meals from service staff at service stations.
Different modules are available based on the size of the self-service zone:

Drink islands between the different food and beverage modules let guests choose drinks while waiting for freshly prepared warm meals.
