We take the training of qualified junior staff very seriously, because we want to make a conscious contribution towards the advancement of the proficiency level in our industry.

Apprenticeship Training

  • COOK – Period of apprenticeship 3 years
  • FOOD-SERVICE EXPERT – Period of apprenticeship 4 years
  • SYSTEM FOOD-SERVICE EXPERT – Period of apprenticeship 3 years

Our tailor-made training concept far exceeds the standard program. In addition to attending a vocational school and gaining in-house practical experience, complementary workshops are held to provide apprentices with supplementary knowledge, so that they have the know-how that they need for a successful career. In accordance with current trends and adapting to the economic situation, many food-service operators including ourselves buy ready-to-use products. However, this means that apprentices are unable to learn and practice some skills for their cook’s apprenticeship within the company. In order to provide our apprentices with truly comprehensive and extensive knowledge, workshops on a variety of topics are held once a week: from how to make mayonnaise and dressings to pâtés and terrines. Our apprentices also learn about and practice the correct way to handle meat, game and fish by participating in excursions and special training sessions. For example, we visit a butcher and, together with the specialists, we teach the apprentices about how to process and debone diverse animals for slaughter on site. Or a hunter gives us fresh game, which we process for him in the correct manner and then return to him prepared in portions with our thanks for the opportunity to practice this skill.

It is our opinion that the purpose of vocational training is to impart all the knowledge, abilities, skills and behavior that are necessary for optimum professional performance and occupational advancement. In order to attain these goals, we design the specialist training in cooperation with the apprentices, because only in this way can targeted examination preparation be achieved. The success of our apprentices is proof of our approach: each year, several of our optimally prepared junior staff pass their final apprenticeship examination with distinction or are awarded a gold medal in apprenticeship competitions.

Vacation Work Experience
Every year in the summer months, we offer school students the opportunity to try out working life, and to gain an insight into the operation of a renowned catering company. Favored applicants for participating in obligatory work experience are students from colleges and vocational schools which specialize in hospitality and tourism.

We are dedicated to supporting the advancement and training of qualified junior staff and will also be intensively involved in producing top-quality employees in the future. This is reflected in the selection of applicants. As a renowned and valued training firm, we receive innumerable applications, which are then subject to a rigorous selection process. We work with motivated and interested young people who have made it their goal to perform their selected occupation competently and optimally at the same time as experiencing the joy of cooking and providing a valued service.
